Hi, everyone! We have another summer salad recipe here that saves well in the fridge and is super filling.  This kale-themed salad is always such a hit, and so totally easy that it’s one of my personal favorites for all summertime events. With goat cheese, it’s easy on the stomach, and can be eaten with zero guilt. Cantaloupes are amazing this time of year- let’s enjoy one! This pairs well with any protein or side grain, but also loves to be savored alone. 
Ingredients:
1 bunch of organic kale
1 cantaloupe
1 hunk of your favorite goat cheese
Ground pepper, to taste
Sea salt, to taste
What to do:
Rinse your kale off, massage its leaves with olive oil (that’s really what I do), and rip up the leaves (or neatly chop, if you so choose). Throw it into a giant salad bowl. This is all the olive oil needed, so don’t add more.
Cut up your cantaloupe into generously-sized squares.
Add sea salt, as much as you’d like.
